
As a natural product, North American lobsters (Homarus Americanus) are subject to seasonal changes and government regulations affecting supply and product characteristics.
In the summer and early autumn lobsters migrate to the warmer waters inshore to shed their old shells (molt) and begin the re-growth process. Lobsters undergoing molting have softer shells and are generally weaker with lower meat content and are considered to be very delicious.
Hard shell lobsters are found in the deep colder waters of the North Atlantic. These lobsters have a harder shell and are stronger with a higher meat content. Hard shell lobsters are available year round however in the summer and autumn months the warmer waters of the North Atlantic affect the overall supply and price.

Placopecten Magellanicus is the species caught in the Northwest Atlantic, both in the U.S. and in Canada. Sea scallops are shucked at sea and kept on ice or frozen onboard. The fishing year begins on March 1st and is strictly regulated by the U.S. Government.
Fresh and frozen sea scallops are available year round.
Popular Fresh scallop sizes for the European markets are 10/20ct and 20/30ct per lb. Larger and smaller scallops are available on request.
Fresh scallops are mostly packed in containers of 2kg or 1kg or 1-gallon units. The tubs are packed in master cartons of 4x2kg (8kg pack) or 5x2kg (10kg pack). Tubs are packed in styrofoam cartons with a liner and ice.

Monkfish (Lophius Americanus) are caught in the Northwest Atlantic and are landed both by draggers, gillnetters and as by-catch from scallop boats from Maine to North Carolina.
Skate (Ailes de Raie/Raja) wings come from both local dayboat draggers and gillnet vessels and are a year-round fishery on the Eastern seaboard of the United States.
Harvested from the cold waters of the North Atlantic, only the highest quality whiting (Merluccius Bilinearis) is selected under the Caniber brand.
